Ingredients: 2 cups flour 1 1/2 teaspoon baking powder 1/2 teaspoon salt 1/2 cup (i stick) unsalted butter softened 1 cup sugar 2 large eggs 2 teaspoons vanilla 1/2 cup whole milk ( I use 1/2 sour cream and half skim milk) 2 cups blueberries dusted with flour
Streusel Topping 8 tablespoons sugar 2 tablespoons flour 4 teaspoons vegetable oil
course sugar on top of streusel topping

Directions:350º make sure you use cupcake papers
prepare streusel topping and set aside wash and dry blueberries then dust with flour
In a small bowl, whisk together flour, baking powder and salt In a large bowl, beat butter and sugar until fluffy. Add eggs, vanilla and milk. Beat. Add flour mixture and stir until just combined. Stir in blueberries Divide evenly into 12 muffin cups. Sprinkle with topping. Then sprinkle with course sugar.
Bake 25 minutes or until tester inserted comes out clean
Streusel Topping in a small bowl whisk together sugar and flour then add oil and mix until mixture is sandy. |

Notes: This is a pretty muffin. The topping is yummy and the course sugar looks nice and adds a little crunch.
