1 lb. ziti or penne pasta
1 lb. sweet or hot Italian sausage, casings removed, or lean ground beef
2 quarts Marinara sauce
½ c. basil pesto
1 - 15 oz. container whole milk ricotta cheese
2 c. shredded mozzarella cheese
½ c. grated Parmesan or Romano cheese

Preheat oven to 375º F. Coat a deep lasagna pan (about 12 x 10 inch) with cooking spray. Cook pasta to al dente (still a bit firm); drain (do not rinse) and put into a large mixing bowl. Add pesto and mix well; set aside. In a large saucepan (or the one you cooked the pasta in) cook the sausage or ground beef until browned. Add the marinara sauce and mix well; set aside. In a bowl, mix the ricotta and half the mozzarella.

Ladle a third of the meat & marinara sauce mixture on the bottom of the prepared pan. Add half the pesto coated pasta. Spoon half the ricotta mixture over pasta. Repeat layers, ending with final third of sauce. Top with remaining mozzarella and grated cheese.

Cover with foil and bake for 30 to 40 minutes or until bubbling. Remove foil for final 5 minutes.

Great for parties, pot lucks, etc. You can omit the meat if you choose. You can also cut the recipe in half and make just one layer if you're only feeding 4 or 5 people. Most recipes you find won't use the pesto for coating the pasta but I think it gives it a special flavor. Comfort food heaven!!!
