¼ c. extra virgin olive oil
1 small onion, chopped
2 cloves garlic, minced
½ c. petite diced tomatoes
1 red or yellow bell pepper, chopped
½ can anchovy fillets, finely chopped (optional, but if you don't use them add ½ tsp. salt)
1 T. capers,
¼ c. fresh basil leaves, minced, or 1 T. dried

Directions:
Directions:
In a saucepan combine olive oil and onion, cook until onion is soft. Add garlic and cook until aromatic, but do not brown. Add remaining ingredients and cook for a few minutes. Toss with freshly cooked pasta. Add hot pasta water to desired consistency.

This is a great sauce for topping fish or tossing with pasta. You can also omit the peppers and add some chopped Kalamata olives. If tossing with pasta, thin it a bit with some hot pasta water if needed for proper consistency..
