1 box cake mix
1 can diet soda

cool whip
fresh berries or Maraschino cherries

Directions:
Directions:
Simply mix one can of diet soda into the cake mix and bake as directed on cake box for cup cakes.
(This allows you to omit the oil and eggs which saves calories.)

For a chocolate cake, use a dark diet soda.
For a vanilla cake, use a lemon-lime diet soda. (I use Sprite)

You can serve the cake with fruit and whipped cream which is lower in calories and sugar than icing.

Have fun with the flavors you choose! For example:

French vanilla cake with fresh summer berries
Lemon cake with raspberries
Chocolate strawberry cake with sliced strawberries

I served this cake at the Breast Cancer Awareness Fundraisers at my Curves in Clare for several years and also at my granddaughter, Joesi Krieger's, Bike & Build Fundraiser (for biking across Central USA for affordable housing projects). Also brought to MCC's potlucks.

So easy to make and oh so good in both taste and nutrition.
