½ c. butter
1 c. packed brown sugar
3 eggs
1 c. sugar
1 c. flour
1 tsp. baking powder
1 can of pineapple rings (drain, but reserve the juice)
Maraschino cherries (stemless)

Directions:
Directions:
Preheat oven to 350º
Melt butter in iron skillet. Sprinkle brown sugar over butter. Place pineapple rings in skillet with a Maraschino cherry in the center of each ring. Beat yolks of eggs, sugar, 5 tbsp. pineapple juice. Sift into this flour and baking powder.
Fold in 3 stiffly beaten egg whites and pour over pineapple rings in skillet. Transfer skillet to preheated oven and bake for 45 minutes or until toothpick comes out clean. Cool and turn out onto a cake plate.
