3 T. olive oil
1 large onion, chopped
1 green pepper, chopped
5 cloves garlic, minced
fresh cilantro, chopped - optional
1 tsp. black pepper
salt to taste
2 packets Sazon
2 bay leaves
Adobo and oregano
2 lbs. beef stew meat - small pieces
Optional: Add meaty soup bones or
short ribs if you're making a large amount
1 small can tomato sauce
water to cover (or mixed with beef broth)
If no beef broth, add 2 beef bouillon cubes
1 cup fresh green beans
2 carrots, peeled and sliced
1 large chayote squash, peeled, cored, sliced
1 small can white beans, rinsed and drained
1 green banana, peeled and cut in ¾ inch pieces
1 plaintain, peeled and cut in 1 inch pieces
5 large yautias, peeled and quartered
5 potatoes, peeled and quartered
1 cup peeled and chopped pumpkin squash
2 ears of fresh corn on the cob, cut in 6 pieces each

Directions:
Directions:
Saute the onion, garlic, green pepper,
seasonings and Sazon in a large pot.
Add the tomato sauce and continue to
stir and cook for another 2 minutes.
Add the meat and braise for a few minutes.
Add all the veggies and beans and cover
with water/beef broth.
Bring to a slight boil, then cover and simmer
until meat and vegetables are tender.
Adjust seasoning for taste and serve with
baguette bread and butter.
