2 cups of All purpose flour
½ tsp. salt (as per your taste)
2 tsp. oil or melted ghee
Warm Water as needed for kneading

1. In a mixing bowl add 2 cups of all purpose flour and salt .
2. Mix in 2 tsp. of oil or melted ghee and incorporate it within the flour.
3. Start kneading by adding a little water at a time, and preparing a tight and a little stiff dough but not too stiff. You can even use an electric mixer to knead the dough.
4. Once the dough is kneaded, make a smooth round ball with the dough. Cover the bowl with a plastic wrap and keep it aside for about 30 minutes to rest.
5. After 30 minutes, rub your hands with oil or ghee and knead the dough with your hands on a clean flat surface. Once the dough is smooth, divide it into equal portions as per size desired.
7. Flatten the puris with a rolling pin. The size of the puri is smaller in diameter as compared to roti.
8. Heat oil in a wok or karahi on medium high for frying.
9. Test the oil by dropping a small piece of the dough. If dough comes up to the surface, it is rightly heated.
10. Fry the pooris one at a time by pressing it gently in the centre with a skimmer until it fluffs up. Flip it over when the puri is golden brown and fry the other side.
12. Remove the puri from the karahi and place it on a plate with paper towels to remove any excess oil.
13. Serve with curries or kheer.
