1 pkg dry yeast
¼ cup warm water (105º-115º)
pinch of sugar
pinch of ginger
4 cups flour
½ t salt
1 ¼ cup warm water

1 large can whole, peeled tomatoes
1 small can tomato sauce
dried basil, dried oregano, garlic powder, salt
Green onions, mushrooms, green peppers
Sliced mozzarella and grated Parmesan cheese

Make dough:
To the ¼ cup warm water add the pinch of sugar and the pinch of ginger. Sprinkle yeast on top and let it bubble. Put 4 cups flour and ½ t salt in a mixing bowl with dough hook. Add yeast mixture and the 1 ¼ cup warm water. Mix until dough is smooth and comes away from the sides. Let it rest for 1 hour covered. Make small dough balls and flatten on a floured surface. Fry dough in ¼" canola oil in a frying pan until golden brown. Flip over and fry the other side. Put on a paper towel to drain.
Tomato mixture:
Drain the juice from the canned tomatoes. Chop tomatoes and drain until almost dry. Put them in a pan on low and simmer along with the canned tomato sauce and spices to your taste.
Onions:
In olive oil saute onions, mushrooms, pepper and anchovies (if you like them)

Top dough rounds with sliced mozzarella, tomato mixture, veggies, oregano and grated cheese.
This works best to set up as a bar and let everyone make them anyway that they like.
