7 lbs cucumbers for pickling, sliced
5 lbs sugar
½ gallon white vinegar
2 cups lime
½ box pickling spices
1 tsp salt

Directions:
Directions:
Soak cucumbers overnight in 3 gallons water and lime. The next day, rinse cucumbers in clear water, three times, then let stand in clear ice water for 3 hours. Drain well.

Mix vinegar, sugar, spices, and salt until well combined. Add cucumbers, and let stand overnight. The next day, cook the cucumber mixture 45 minutes, then pack in sterilized jars. Cover jars with heavy towel until the seals pop. Makes 10 pints.

This was a labor of love. I well remember that five gallon bucket of cucumbers sitting on our kitchen floor, seemingly for days on end, and my mother laboriously changing the water.
