1 chuck roast
2 bay leaves
Finely chopped potatoes
Finely chopped carrots
Finely chopped onion
Finely chopped celery
(for ease, a bag of frozen chopped carrot, celery and onion can be used)
1 small bottle of tomato juice (or to taste)
Salt
Extra beef broth to make 8 cups including beef cooking liquid
1 cup quick barley

Directions:
Directions:
Cover meat in salted water, add bay leaves and simmer until very tender, remove from pot and set aside.

Cut beef into bite sized pieces and add enough broth to cooking liquid to make 8 cups.

Saute carrots, celery and celery in butter until tender (4-6 minutes) add potatoes, broth and barley.

Bring to a boil, reduce heat and simmer 20 minutes, stirring occasionally. Add tomato juice and beef. Heat until warm.
