2 c flour
½ t soda
½ t salt
3 eggs
1 c sugar
1 c oil
1 package strawberry gelatin
½ c buttermilk
1 package (10 oz.) frozen strawberries, thawed

Directions:
Directions:
Beat eggs - Add: oil, sugar, gelatin,and buttermilk - Stir/Mix until well blended.
Add: flour mixture (flour, soda, salt) - Drain ½ c juice from strawberries and reserve for icing. - Fold chopped/pureed berries into batter - Then pour into greased and floured cake pans. Bake 350º for 25 - 30 minutes.

ICING: ¼ c butter, 2 c powdered sugar and strawberry juice - Beat Well.

This is a great cake for Easter company. It is exceptionally moist and good. The icing can make it really sweet though, so if that is a problem try mixing some of the juice with cool whip or whipped cream for the topping.
