Ingredients:  
1 lbs. ripe pears (9 cups)
1 c grated pineapple (or crushed)
Grated rind and juice of 1 fresh lime
5 c sugar

Directions:
Directions:
Slice pears before measuring - then process in food processor until fine.
Combine pears and pineapple, lime zest and juice - Add sugar - Cook over low heat - stirring frequently.
Cook for 20 minutes - Pour into sterilized jars and seal while hot.

We have always made jelly. From the time we were kids we helped peel peaches and apples, pick grapes, brave the blackberry thickets (trying to escape thorns and copperheads) to help make jellies and preserves. But until recently I never heard my mother, known now as Memaw, talk about Pear Honey. I had never heard of Pear Honey, never tasted Pear Honey, and we grew up with pear trees. However, I have tasted it now and it is a must try. So, start looking for someone with a pear tree and excess pears. It's easy to make then enjoy it with some home made biscuits. I would say share some with your friends and neighbors, but you will probably want to keep it all to yourself.
