1 lb ground pork
1 small onion
1 head of cabbage
1 egg
¾ cup uncooked rice (do not soak)
1 large can sauerkraut
salt and pepper to taste

Directions:
Directions:
Cut around core of cabbage to help loosen leaves. Put whole cabbage in large pot and cover with water. Bring to a boil, cover and turn heat off; let stand for about 15 minutes (so leaves could soften slightly). Chop onion and sauté in small amount of butter until soft. Mix with pork, rice, egg, and salt and pepper. Separate cabbage leaves and stuff with rice mixture (roll and fold). Layer in a large pan and cover with drained sauerkraut and leftover cabbage (chopped). Cover with water; add salt and pepper. Bring to a boil, then lower heat, cover and simmer for about 3 hours.

Mae Feld worked for the Lancer Restaurant in Depew before moving to New Orleans, where we first met her. She showed me how to make Golumkpi a slightly different way. I got a few recipes from her. As it turned out, she knew some of the Novaks so it was nice talking to her and listening to stories. We became close friends.
