8 T. superfine sugar, divided
1 T. cornstarch
½ c. water
3 egg whites
½ tsp. salt

Directions:
Directions:
In a small saucepan, combine 2 T. sugar, cornstarch, and water. Cook over medium heat until thick and clear. Remove from heat to cool. Beat egg whites with salt until soft mounds form. Add remaining 6 T. sugar, one at a time, beating after each addition. Add cooled cornstarch mixture and beat until meringue stands in stiff peaks.

Spread onto a hot pie and bake for 8 to 10 minutes until meringue just begins to brown.

This meringue recipe is from my Aunt Mary. I have no idea where she got it, but she swore if you made it this way the meringue would never shrink or form those little sweat drops on top; and she was right!

Be sure to MAKE THE MERINGUE FIRST so the pie you are covering is still hot when you spread it on. Seal it tight to the edge, touching the crust all the way around, and don't over bake it.
