4 eggs, beaten
3 cups milk (whole)
1 cup sugar
½ teaspoon salt
2 teaspoon vanilla
2 cups cooked rice
½ teaspoon cinnamon
½ cup raisins

Directions:
Directions:
Preheat oven to 300º F.
Spray oven-proof casserole dish with Pam
In a large bowl, slightly beat eggs, stir in sugar – mix well
Add all other ingredients – stir well
Pour mixture into prepared dish
Set dish in pan of hot water and bake for 30 minutes
After 30 minutes of cooking, insert spoon at edge of pudding and stir from bottom to distribute rice & raisins.
**Continue baking for additional 60 minutes

Remove from oven when knife inserted halfway between edge and center of casserole comes out clean.


**Cooking time is approximate depending on oven & location of rack.

I have been asked to share this recipe many times over the years. Baked rice pudding has more of a true custard texture. Plus, I think it is way easier to prepare than doing it on the stove top. You be the judge.
