Sweet Potato Fries Recipe

2 sweet potatoes, cut in ¼-inch sticks
2 Tbsp olive oil
Seasoning salt

Directions:
Directions:
Place an oven rack in top third of oven. Heat to 400º. Coat a baking sheet with nonstick cooking spray. Toss potato sticks with olive oil and seasoning salt (to taste) until well-coated. Arrange in a single layer on baking sheet. Bake 30 to 40 minutes or until tops of potato sticks start to turn brown. Turn sticks over and bake another 5 to 7 minutes. Toss with more seasoning salt if necessary.

"I never liked sweet potatoes much (sorry, Meme) until I went to Lucky Platter in Evanston which made the best sweet potato fries. I went there all the time for barbecue chicken sandwiches topped with swiss cheese and served with a side of those fries. I kept trying to make them at home but they were never as good. Then I asked one day how they made them. Yep, they were fried. Dang it. So I kept experimenting with baking them and this recipe was my favorite. Not as yummy as fried, but a lot easier and healthier. Actually, now I think I like these better." -- Leslie
