Mexican Rice Recipe

1 cup of white rice, uncooked (not minute)
1/2 Tablespoon lard or solid Crisco
Salt and pepper
Garlic powder to taste
1/4 teaspoon cumin
1/3 cup tomato sauce
1 15 oz can chicken broth
1/2 chopped green pepper
1/2 chopped white onion
3/4 cup chopped mushrooms (optional)

Directions:
Directions:
In a frying pan, heat Crisco over medium heat.

Brown rice until edges are lightly brown.

Add vegetables and stir until frozen mix is thawed (if using).

Add salt, pepper, garlic powder and cumin into rice and saute to bring out the flavor.

Add tomato sauce and broth, stir.


Simmer mixture, checking periodically and stirring to prevent burning.

Cook until broth is absorbed.

To save prep time, add a 1/2 bag frozen of pepper, onion and celery mix in place of the diced fresh pepper and onion.
