1 28 ounce can diced tomatoes
1 clove garlic, grated
1 tsp dried basil
1 tsp dried oregano
salt and pepper to taste
250 ml whipping cream
1 Tbsp butter
1 lb mushrooms, sliced
1 lb pepperoni (or sausage of choice), sliced into coins
1 lb (454 grams) uncooked spaghetti
Parmesan cheese, grated
parsley, chopped

Directions:
Add tomatoes, garlic, basil, oregano, salt and pepper to a pot. Bring to a boil, then simmer while you prepare the rest.
Add the butter to a frying pan. Heat to foaming then add the mushrooms. Fry until they have browned then add the pepperoni/sausage. Fry on medium heat until cooked though. (5-10 minutes)
Cook spaghetti according to package instructions. Drain but keep a bit of the starchy cooking water in case you need to loosen the final product.
Add whipping cream to the tomato mixture and simmer another 5-10 minutes.
Place all the ingredients in a large serving bowl. Mix to combine. Top with Parmesan and parsley.
