1 egg white
6 tablespoons sugar, divided
3 tablespoons Minute Tapioca
2 cups whole milk
1 egg yolk
1 teaspoon vanilla

Directions:
Directions:
Beat egg white in medium bowl with electric mixer on high speed until foamy.

Gradually add three tablespoons sugar, beating until soft peaks form.

Mix tapioca, 3 tablespoons sugar, milk and egg yolk in medium sauce pan and let stand five minutes.

Cook on medium heat, stirring constantly, until mixture comes to a full boil.

Remove from heat and quickly stir in egg white mixture until well blended, then stir in vanilla.

Cool before serving.
