Preheat oven to 350º"
Coat the bottom of a glass with olive oil just enough to coat.
Wash and peel sweet potatoes and then cut them into medium pieces. Place the sweet potato pieces in the baking dish and turn them to coat with the olive oil. Sprinkle moderately with salt and pepper to taste.
Bake for 50 min, covering the dish for the first 20 min. Stir and then uncover for remaining time.
