Note: Increase this recipe as needed

1 lb. crabmeat - picked clean
¼ cup saltine cracker crumbs (abt.5-6)
2 T. mayonnaise
1 T. mustard
1 tsp. Old Bay Seasoning
1 stalk of celery, finely diced
1 carrot, finely diced
capers
2 egg whites, beaten stiff
¼ inch of canola oil in pan

Directions:
Directions:
In a bowl mix the saltine crackers, mayo,
mustard, seasoning and vegetables.
Add beaten eggs into the mixture.
Gently fold in the crab meat.
Make 4-6 cakes, pressed gently together.
Chill covered in refrigerator for at least one
hour to set cakes.
Fill oil in pan and heat to 360º F.
Place crab cakes in pan and fry for 2-3
minutes until golden brown. Turn with
a spatula and cook another 2-3 minutes.
Drain on paper towels and serve hot with
tartar sauce on the side and more crackers.
