1 small onion or shallot, finely chopped
1 clove garlic, minced
1 cup dry white wine
¼ cup fresh lemon juice
6 T. unsalted butter, divided
¼ cup capers, rinsed and dried
1 tsp. salt
black pepper
dried thyme
light sprinkling of paprika or seafood
seasoning or red pepper flakes
4 - 6 oz. white fish fillets (tilapia, walleye, etc).

Directions:
Directions:
Combine the onion, wine. garlic and lemon juice
in a pot and bring to a boil. Boil until liquid
reduces to about ¼ cup, abt. 7-10 min.
Take the pot off the heat and stir in 4 T. butter,
the capers and seasonings. Let stand on stove to
keep warm.
In a skillet, melt the 2 T. butter (and a bit of olive oil
if you like) over medium heat. Salt the fillets and cook
3-4 minutes on the first side, then turn the fish. Cook for
4-6 minutes more. Move fish around to keep from sticking.
Transfer the fish to a platter. Pour the sauce into the
skillet and cook scraping up the brown bits for 1 min.
Pour over the fish and serve.

There are different variations to cooking this easy
fish dish but the basic ingredients are the same.
