Ingredients: 2 c. chicken from the "Slow Cooker Whole Chicken" recipe, cut into bite size pieces Stock from the same recipe plus enough boxed or canned broth to make 6 cups 2 T. olive oil 1 celery rib, diced 2 carrots, diced 1 medium yellow onion, chopped small 2 cloves garlic, minced 1 T. dried parsley 2 Bay Leaves 1 tsp. dried basil 2 T. flour 2 T. butter ½ c. pastina salt and pepper to taste

Directions:Heat a large stock pot; add olive oil. Stir in celery, carrots, onion, and garlic and saute until vegetables are crisp tender. Add chicken broth and bay leaves, parsley, and basil; bring to a high simmer and cook for about 10 to 15 minutes. Make a paste out of the flour and butter and set aside. Stir pastina into the simmering soup and cook until pasta is tender. Add chicken and butter paste. Stir well, taste and season accordingly, bring back to a simmer and serve immediately. |

Notes: If you didn't make the Slow Cooker Whole Chicken (shame on you) you can substitute rotisserie chicken or cook up a couple of thighs or a breast in the broth then set them aside to cool while you complete the soup; then remove the meat and cut into pieces. You can substitute ditalini or even broken up angel hair pasta for the pastina if you like. Just don't ever add the pasta until last because it will absorb all the broth.
