¼ cup unsalted butter, room temperature
¾ cup packed dark brown sugar
½ cup granulated sugar
1 large egg, room temperature
1 T. molasses
½ cup applesauce
1 ½ cups all purpose flour
1 tsp. ground cinnamon
½ tsp. baking soda
½ tsp. baking powder
½ tsp. fine sea salt
1 ½ cups rolled oats
1 cup chopped walnuts, lightly toasted

Directions:
Directions:
Preheat oven to 350º F.
In a bowl with a hand mixer, cream the butter.
Add brown sugar and granulated sugar. Mix
until smooth. Add egg, molasses and applesauce.
In a bowl, whisk the flour, cinnamon, baking soda,
baking powder and sea salt. Add to mixing bowl.
Fold in the rolled oats and walnuts.

Use a 1 ½ inch scoop to portion out cookies. Arrange on
parchment lined baking sheet at least 2 inches apart.
Bake for 13-15 minutes, rotating pan halfway through
baking. Allow to cool in pan for 3 minutes before
transferring to wire rack to cool to room temperature.

Makes 29 cookies.
