Ingredients:  
3 lbs of chicken in any combination of thighs,
drumsticks, skin removed
1 large onion, cut in large pieces
1 green pepper, cut in large pieces
1 red pepper, cut in large pieces
2-3 cloves garlic, minced
2 packets of Sazon
1 can tomato paste
1 jar of green olives with pimentos
chicken broth and water
¼ cup red wine, optional
seasonings: oregano, cumin, cilantro,
black pepper, adobo
10-12 fresh green beans, ends trimmed
3 carrots, chopped
3 potatoes, quartered
white rice
hot sauce

Directions:
Directions:
In a large pot, saute in oil the onions, garlic and
peppers. Stir for a few minutes and then add the
chicken. Continue to braise the chicken.
Add the seasonings, Sazon and the olives (about 10)
Add enough chicken broth and water (2:1 ratio)
halfway to 3/4 of the pot and add the can of tomato paste.
Add the vegetables and red wine and bring to a boil.
Once the liquid starts to boil, cover and simmer
for a couple of hours.
(If you cook in a dutch oven you can
place in oven @ 300º F. for two hours instead
of on stovetop).

Serve on a large platter with white rice and
hot sauce on the side.
This dish tastes even better the next day.
