2-2.5 lb ground chuck
pack of beef cubes (for fondue usually about 1/2 lb)
onion
red pepper
green pepper
5-6 habaneros
shallot
4-6 cloves garlic
can of beer
2 T. ground chipotle pepper
1.5 tsp cumin
one T. each of:
black pepper, chili powder,cayenne pepper,oregano,smoked paprika,unsweetened cocoa powder
salt to taste-start with 1 t. then add throughout cooking.
15 oz each of : red kidney beans, white navy beans, pinto beans.
28 oz can of crushed tomatoes
(only use about 1/2 or less, will taste too tomatoey with more)
14.5 oz can diced tomatoes
small can tomato paste
squeeze of honey

1. Chop up onion, shallot and peppers, removing seeds and white veins from all peppers.
2. Smash up garlic.
3. Coat bottom of pot with olive oil, add garlic, simmer til soft.
4. add all vegetables, simmer til soft.
5. Add ground beef, salt and pepper. Do not drain.
6. Brown fondue cubes in seperate pan til brown, add to pot.
7. Drain beans. add spices, and rest of ingredients to pot and stir well.
Simmer for about 6 hours.
