Zucchini Bread Recipe

3 cups flour
1t salt
1 t baking soda
1/4 t baking powder
3 t cinnamon

2 eggs

2t vanilla
2 c sugar
1 c unsweetened applesauce
2 c grated raw zucchini

1 c chopped walnuts (optional) I didn’t add this but it's probably good.

Directions:

Combine first group of dry ingredients in a separate bowl.

Beat eggs until light ( in a large bowl as everything will end up in it)

Add next 4 ingredients to eggs and mix.

Then add dry ingredients and nuts (if desired).

Pour into 2 greased bread pans.

Bake at 350 degrees for about one hour. Check with toothpick inserted in center.

I got this recipe from Laurie M., one of the first girls placed in the group home for girls which I opened and directed. Over time, I adapted it. Got rid of the oil and reduced the eggs.
