1 whole chicken, giblets removed
2 or 3 sage leaves
1 yellow onion
2 or 3 cloves garlic, crushed
1 celery rib, broken into pieces

Scrunch up a couple wads of aluminum foil and put in the bottom of your crock pot or use a liner bag. Place the sage, onion, and garlic inside the chicken and put the whole thing in the pot. Cook on low 4 to 6 hours. Remove from pot into a large bowl. Allow to cool until you can comfortably handle it. Remove the skin and discard. Pick the meat off the bones and discard the bones.

You can package the meat and freeze for use in soup, shredded chicken sandwiches, chicken pot pie, adding to salads (like Cobb salad) or making chicken salad. If you have an excessive amount of broth just save it for soup or gravy.

Do yourself a favor and ALWAYS make your own. Yes a supermarket rotisserie chicken is easier, but trust me the flavor of this slow cooked chicken is tops!! I like to not add extra seasoning because I usually package it to use in all different recipes, but if you are going to use it all in the same recipe (like maybe shredded BBQ) feel free to season it at the beginning however you like.
