2 Tbsp unsalted butter
1 onion - finely chopped
Salt & pepper
2 garlic cloves, minced
1 cup orzo
1/4 cup dry white wine
3 3/4 cups chicken broth
2 ounces (1 cup) grated Parmesan cheese
1/2 cup frozen peas thawed

Directions:
Directions:
Melt butter in a large saucepan over medium high heat.
Add onion and 1/4 tsp salt and cook until softened, about 5 minutes.
Stir in garlic and cook until fragrant, about 30 seconds.
Stir in orzo and cook for one minute.
Stir in wine and cook until evaporated, about one minute.
Stir in broth and bring to a boil.
Cook, stirring frequently, until orzo is creamy and tender, about 15 minutes.
Off heat, vigorously stir in Paramesan until creamy.
Stir in the thawed, bu uncooked frozen peas.
Let sit off heat until the peas are heated through.
Sauce should thicken - about 2 minutes.
Season with salt and pepper to taste.
Serve.

If orzo seems too thick, add hot water, just a few drops at a time.
This is a nice substitute for rice or even risotto.
