1 large tomato, chopped
1/2 garlic clove, very finely chopped
1 cooked sausage (like a kielbasa), split lengthwise then diced
1/2 of a 15oz can of cannellini beans, drained and rinsed
2 tbsp extra-virgin olive oil
splash of red wine vinegar
small handful of basil leaves (optional)
1/4 tsp salt and pepper

Combine all ingredients in your lunch container and toss. Bring to work and put it in the refrigerator for lunch.
