2 tablespoon olive oil
3 tsp garlic
1 1/2 cups onion
1 1/2 cups celary
5 carrots, peeled and chopped
4 cups chicken broth
2. (8 oz) tomato sauce
14 oz diced tomatoes
2 cups water
1/2 cup red wine
15 oz can drained/ kidney beans
15 oz can rinsed and drained northern beans
2 cups fresh spinich
1/2 cup whole wheat elbow noodle
2 zucchini chopped
2 tsp oregano
1/2 tsp pepper
2 tsp basil
1/2 tsp tumeric
15 tablespoon grated parmesan

Directions:
In large stockpot, medium heat, heat oil and garlic 2 minutes. Add onion, saute 4 minutes. Add celary and carrots saute 2 minutes. Add broth, tomato sauce, tomatoes and water. Boil, stir often. Add wine. Reduce heat to low. Add beans, spinich, pasra, zucchini and spices. Simmer 1 hr. Garnish with cheese.
