2 lbs. of beef
1 cinnamon stick
2 green cardamom pods
½ tsp. of black pepper
3 cloves
1 tbsp. ginger paste
1 tbsp. garlic paste
1 tsp. of cumin and coriander powder
1 tsp. of turmeric powder
1 tsp. salt
2 tbsp. lemon juice
2 tbsps. of Shan Nihari Masala (Store bought or you can prepare as per ingredients show below)
1 tsp. of paprika
½ tsp. of chili powder
2 onions - sliced
1 cup of olive oil
2 tbsp. of Atta or wheat flour
1 tbsp. of white flour
6 cups of water
½ Chopped cilantro
Chopped Julian ginger slices for garnish
Slice lemons for garnish

Nihari Masala (Optional)
1 tbsp. cumin seeds
2 tsp. fennel seeds
1 tsp. dry ginger
5-6 green cardamoms
2 black cardamoms
4-5 cloves
1 bay leaf
1 inch cinnamon stick
8-10 black peppercorns
1 tsp grated nutmeg

1. In a saucepan, heat ½ cup of olive oil.,
2. Add ginger and garlic paste and fry for a minute on medium heat.
3, Next comes the cumin and coriander powder, Shan Nihari mix powder, turmeric, chili powder, paprika, ½ chopped cilantro, salt and lemon juice.
5 Add the meat and cook on high for about 10 minutes
6 Add water and let it boil for about 1½ hour for the meat to cook on medium.
7 Combine Atta flour and white flour in one cup of water and add to the mixture stirring continuously to avoid lumps.
8 Close the saucepan and cook for another 30 on medium stirring and checking at intervals to see if the meat is done.
9. In a frying pan add ½ cup of oil. When the oil is hot, add cinnamon, black pepper, cardamom and cloves. Remove the spices and add them to the Nihari sauce.
10. Fry onions in the same oil until they are golden brown.
11. Add the hot oil and fried onions to the Nihari mixture and let it simmer for 15 minutes.
12. Taste the Nihari sauce and if it needs more salt or chilies add a pinch.
13. You can also use a pressure cooker to cook the meat. Add all the ingredients and close the pressure cooker.
14. Garnish with cilantro and ginger slices.


If you wish to add homemade Nihari masala, roast in a frying pan for about 5 minutes on medium and blend all the ingredients under Nihari masala. Do not need to add Shan Nihari mix from the store. The homemade Nihari tastes better..
