1 loaf Italian bread
⅓ cup butter
1 large onion, minced
4 cloves garlic, minced
2 celery stalks, finely chopped
2 carrots, finely grated
½ cup chicken broth
2 eggs, lightly beaten
½ cup parsley, finely chopped
2 tsp. rubbed sage
1 tsp. salt
generous grinding of black pepper
2 tsp. italian seasoning

Directions:

Cut bread into ½ inch pieces (about 9 cups). Spread on baking sheet; leave uncovered at room temperature to dry overnight. Put bread in a very large bowl. Melt butter in frying pan, add onion, garlic, celery, carrots, stirring occasionally until tender. Toss vegetable mixture with bread. Whisk chicken broth and eggs together. Toss with bread mixture, parsley, italian seasoning, sage, salt and pepper. Makes 8 cups.
