1 1/2 cup water
1 teaspoon dried onion
1/4 cup dried leeks
1/2 tablespoon butter
2 tablespoons parmesan cheese
1 cup milk
salt and pepper to taste
1 cup potato flakes

Directions:
Directions:
Bring water, onion and leeks to boil. Lower temperature and simmer for 10 minutes until leeks are soft. Stir in butter and parmesan to melt, then add milk, salt and pepper. Stir in potatoes, and simmer about 3 to 5 minutes blend the flavors. Add a little more hot water or potatoes if necessary.

Variation: Heat oven to 375º. Put cooked leeks and potatoes in gratin dish. Sprinkle with chives and additional parmesan and bake 15-20 minutes til browned.
