Zucchini Stew Recipe

2 lb. ground chuck
2 medium zucchini's sliced and then cut in halves
1 chopped onion
3 T olive oil
1 16 oz. can whole tomatoes (you can also use stewed or diced)
1 small can V-8 juice
1/2 T oregano
1/2 T sweet basil
3 cloves of garlic, minced
1/2 cut shredded parmesan cheese
salt and pepper to taste

Directions:
Directions:
Brown meat and add can of tomatoes. Saute' chopped zucchini in olive oil. Add onion and garlic and cook until zucchini softens up. Add meat/tomato mixture to the zucchini and onions. Add the remaining ingredients and cook down until a majority of the liquid is reduced.
Top with additional cheese when it's served and eat with crusty Italian bread!

Grandma Regina gave me this recipe'. I added a few extra ingredients like the sweet basil and cheese. This is Angie's favorite dish that I make.
