Salad:
2 c. diced seedless watermelon
1 c. halved grape or cherry tomatoes
1 c. diced Kirby or English cucumber
1 green onion, thinly sliced
½ c. crumbled feta cheese (I use tomato basil flavor)
1 T. each chopped fresh basil and/or mint
4 c. Romain lettuce, torn into bite sized pieces
1 c. baby arugula leaves or watercress sprigs

Dressing:
4 T. olive oil
2 T. seasoned rice vinegar
2 tsp. peeled, minced fresh ginger
2 tsp. grated lime peel
1 garlic clove, minced
salt and pepper to taste

Garnish: ¼ c. toasted pine nuts or slivered almonds

Directions:
Directions:
Whisk dressing ingredients together in a large bowl. Season to taste with salt and pepper. Add all salad ingredients, except lettuce and arugula, to same bowl and toss to coat. Arrange lettuce and arugula leaves on a serving plate, top with watermelon mixture. Sprinkle nuts on top.
