1 lb. boneless fish - Tilapia, halibut, cod or fish of your preference
2 tbsp. of corn starch
1 egg
3 tbsp. of gram (besan) flour
2 tbsp. of lemon juice
1 tbsp. of ginger paste
1 tbsp. of garlic paste
1 tsp. of green chili paste
½ tsp. of paprika
½ tsp. of cayenne pepper (optional0
1½ tsp. of salt
1 tsp. black pepper
½ tsp of turmeric
½ tsp. of cumin and coriander powder
2 tbsp. of fresh chopped cilantro
Oil for frying

1. Wash the fish cut into bite size pieces and pat dry with a paper towel..
2 Add ginger, garlic, lemon juice, salt, green chilies, turmeric, cumin and coriander powder, paprika, black pepper and cayenne pepper (optional)
3 Mix the ingredients together and marinate the fish for about 20 minutes in the refrigerator.
4. Take the fish out of the refrigerator and add gram flour, corn starch, egg, and fresh cilantro and mix well. If the batter is too dry, add 1 - 2 tbsp. of water.
5 Heat oil in a wok on medium high. Test the oil by adding a drop of batter and if it comes up it is ready for frying.
6 Fry the fish until it is golden brown, remove on to a dish with paper towel to absorb excess oil.

Serve fish pakora with mint coriander chutney and lime juice.
