2lbs. Andouille Beef Sausage (Hillshire Farms)
1 medium bell pepper - chopped
1 white onion - chopped
4 cups cooked rice
1 cup frozen mixed vegetables (thawed)
2 garlic cloves
2 bunches green onions - chopped
2 tbsp. olive oil
Salt/Pepper - to taste

Directions:
Directions:
1. Cut sausage into bit size slices and cooked until done. Remove sausage from skillet and set
aside.
2. In same skillet add oil, onion, bell pepper and garlic. Cook on medium heat until onions are
tender.
3. Add mixed vegetables and cook until heated thoroughly. (about 3-5 minutes)
4. Add rice and sausage and cook until heated through. (about 3-5 minutes)
5. Top with green onions and serve.

I typically don't clean the skillet after cooking the sausage. I leave the drippings in the pan for more flavor.
