2 cups wheat flour
1 cup and 2 tbsp. boiling water
2 tbsp. olive oil
¼ tsp. of salt
2 tbsp. ghee for brushing

Directions:
Directions:
1. Add 2 cups of wheat flour , olive oil and salt. in an electric mixer. Using a dough hook, mix the ingredients together.. If you do not have an electric mixer, rub the ingredients together with your hands.
2. Add 1 cup of boiling water and continue kneading the dough scraping the sides. Add the 2 tbsp. of water if it is needed until the dough is soft and smooth.
3. Cover the dough and let it rest for about 30 minutes.
4 After the dough has rested divide the dough into equal balls and keep aside for about 15 minutes.
5. Using a rolling pin, flatten the dough balls making a round circle. Heat up the tawa or large frying pan.
6 Cook the rotis until you see bubbles, turn it around and cook the other side. If you press the sides lightly with a spatula or a soft cloth, you will see the roti rise.. If you are cooking on a gas cooker, turn the other burner on and place the roti from the frying pan directly on the burner after turning it twice on the frying pan.. You will see the roti rise as soon as you put it on. Quickly turn the roti on the other side and remove and place it on a plate.
7. Brush a little ghee on the roti.

Serve the rotis with any meat or vegetable curries.
