1 cup all-purpose flour
1 cup vegetable oil
2 cups finely chopped onion
1green bell pepper, finely chopped
1 red bell pepper, finely chopped
4 cloves of garlic
2 teaspoons of salt
1 teaspoon of dried thyme
1 jalapeno pepper (seeded and shopped fine)
¼ cayenne pepper
1 tablespoon of file powder
2 LBs Adoule Sausage
2 LBs Crap Legs
4 LBs Shrimp, peeled and deveined
1/4 cup Creole seasoning (preferably Tony Chachere's)
1 pound crabmeat
2 LBs of boneless, skinless chicken thighs
1 bunch scallions, finely chopped
1/2 bunch parsley, finely chopped
1 teaspoon of olive oil

Directions:
Make the roux: Combine the flour and vegetable oil in a wide Dutch oven over medium-low heat and cook, whisking constantly, until dark brown, about 45 minutes. Remove from the heat and set aside.
Cook the sausage and chicken for 20 minutes and season with creole seasoning. Set aside. In a 10-quart pot poor in 1 tablespoon of olive oil, stir in the onion, bell peppers, salt, garlic, thyme, jalapeno pepper, cayenne, file powder and roux and cook over medium heat, stirring occasionally, until the vegetables are very soft, about 15 minutes. Add to the roux with 10 quarts water. Pour chicken in the roux and cook down for 1 hour and 30 minutes. Add the blue crab, shrimp and lobster tail and boil until cooked through, 15 to 20 minutes.
