1 1/2 lb. ground beef
1 pkg. taco spices & seasoning mix
1 pkg. enchilada spices & seasoning mix
3 c. water
3/4 lb. each -- Monterey Jack and mild or sharp cheddar cheese, both cheeses grated
12 corn tortillas, cut in half
6 oz. can tomato paste
2 oz. can sliced olives

Directions:

Preheat oven to 350ºF.

Mix the package of enchilada spices with the tomato paste and 3 cups of water. Heat to a boil. Remove from heat and set aside.

Brown the meat and drain. Add the package of taco spices to the meat, and mix well.

Coat the bottom of a 9 x 13 x 2-inch baking dish with one-half of the enchilada sauce. Next, layer one half of the tortilla halves, one half the seasoned meat, and half of the two cheeses. Repeat the layers using the other half of the enchilada sauce, tortillas and seasoned meat. End with the cheese and olives.

Cover with foil and bake at 350ºF for 20-30 minutes, removing foil for the last 10 minutes.
