Meatloaf
1 lb. extra lean ground sirloin
1 finely chopped onion
2 tbsp. of olive oil
1 finely chopped carrot
4 cloves of finely chopped garlic
1 tsp. of ginger paste
1 stick of finely chopped celery
½ cup of bread crumbs
2 eggs
¼ finely chopped red bell pepper
¼ finely chopped green pepper
1 tsp. of salt
1 tsp. of freshly ground pepper
½ tsp. of paprika
½ tsp. Louisiana hot sauce or Tobasco
½ tsp. Worcestershire sauce
½ tsp. of Italian Seasonings
½ tsp. cayenne pepper (optional)
¾ tsp. of cumin powder
¼ cup of freshly chopped parsley


Glaze
1 tbsp. of tomato paste
1 tbsp. of tomato sauce
1 tsp. vinegar
1 tsp. HP sauce
¼ tsp. of salt
¼ tsp. of ground pepper
¼ tsp. of paprika
¼ tsp. Louisiana hot sauce or Tobasco
1 tsp. of virgin olive oil

Directions:
Directions:
1. Heat olive oil in a skillet, and add garlic, ginger and onions for about 2 minutes.
2. Once the onions are translucent add green and red bell peppers, celery and carrots and cook for 2 minutes.
3 In a large bowl, add ground beef and pour the cooked onion mixture into the beef..
4. Add the rest of all the ingredients to the beef and mix using your hands.
5. Cover the beef mixture with a foil or plastic wrap in a larger casserole dish and make a loaf and let it sit for about 15 minutes.
6. Preheat the oven at 350º
7. Bake the meatloaf in the oven for about 25- 30 minutes and remove from the oven.
8. Using a brush, glaze the top and the sides with the tomato mixture.
9. Put the dish back in the oven for another 30 minutes until the top has browned.
10. Take the dish out of the oven and let it sit for about 15 minutes until the juices have settled.
11 Serve with gravy and mashed potatoes or roasted potatoes.
