1 lb. of lean steak or roast cut up cubes
2 tbsp. of olive oil
4 large

red potatoes cut up in small pieces
2 carrots cut up in circles
1 tsp of paprika
1 onion chopped
1 tsp of garlic paste
1 tsp of ginger paste
¼ cup of celery
1 tbsp. of tomato paste
¼ tsp of Worcestershire sauce
1 bay leaf
1 cup of vegetable or chicken stock or beef stock which is low sodium
⅓ tsp of thyme and fresh rosemary
1 tbsp. of all purpose flour
1 tsp of salt
1 tsp of pepper

Directions:

1. Cut up the meat into 1 inch cubes
2. Season with a pinch of salt, paprika and fresh black cracked pepper.
3. Coat the meat with 1 tbsp. of white flour.
4 Heat olive oil in a saucepan over medium high heat and caramelize the meat for about 10 mins or until it is dark brown
5 Add onions and garlic and cook. Add the bay leaf, Worcestershire sauce, thyme and rosemary for seasoning.
6. Add 1 cup of either chicken, beef or vegetable stock and cook on medium for about 1 hour or until the meat is almost done. Add vegetables, potatoes and carrots and cook about ½ hour.
7. .Add 1 tbsp. of flour to ¼ cup of flour and mix well.
8. Add tomato paste and mix.
9. Cook the stew until it the sauce thickens
10.Taste the sauce to ensure that there is enough salt and pepper.
