1/2 small red onion, finely diced
1/2 c. chopped dry sun-dried tomatoes
1 ear of corn, kernels removed
3 T. extra virgin olive oil
1 small avocado, diced
1/4 c. crumbled feta cheese
2 T. chopped flat-leaf parsley
Salt and freshly ground black pepper

Directions:
Directions:
Soak the sun-dried tomatoes in warm water for about 30 minutes and drain. In a small bowl, combine the onion, sun-dried tomatoes, corn, and olive oil. Refrigerate until ready to serve. Just before serving, add the avocado, feta cheese, and parsley. Gently toss and season with salt and pepper to taste.
