1 beaten egg
2 Tbs. milk
1/2 tsp. salt
1 c. flour

Directions:

Mix together egg, milk and salt. Add flour to make stiff dough. Roll very thin on floured surface. Let stand 20 minutes. Dust flour on dough so it doesn’t stick and roll up loosely to facilitate cutting into strips. Slice about 1/4-inch wide. Unroll slices and spread out noodles to dry. Sharon puts the slices on newspaper to dry. Takes at least 2 hours to dry, depending on weather.

Drop dry noodles into boiling chicken broth or boiling salted water. Cook uncovered until done. Add cooked chicken to noodles.

Grandma's chicken and noodles dish is a legendary family favorite crossing generations and state lines. She made her chicken and noodles every trip out to California from her home in Joplin, Missouri. Grandsons Craig Stephens and Rusty McKee fondly remember how the flour dust settled in the most unexpected corners of the kitchen after one of her noodle-making marathons. If you make these noodles, know that they don’t have to be perfect. Craig remembers some being thick and some being thin. All of them tasted great. Craig also recalls Grandma using these same noodles to make a savory beef stroganoff.
