1 (15 oz.) can black beans, drained and rinsed
1 (15 oz.) can black eyed peas, drained and rinsed
1 (15 oz.) can Shoepeg or white corn, drained and rinsed
1 (15 oz.) can diced tomatoes, drained
2 bell peppers, cored, seeded and chopped
1 bunch green onions, cored, seeded and chopped
1 bunch cilantro, chopped
10-12 oz. Italian salad dressing

Directions:

Mix all ingredients in a large bowl.

Refrigerate overnight.

Serve with tortilla chips.

After living in Missouri for most of their lives, Carol Sue and Kenny Sawyer moved to Texas to be near sons Jeff and Greg and their growing families. Sunday dinners together quickly became a tradition in the Sawyers' new home. Carol Sue was very eager to share this recipe with her sister, Mary Stephens, who also loved to entertain. This light and refreshing dish is a crowd-pleasing appetizer. It can also be used as a side dish, condiment for meats, or as part of a salad.
