4 qts. cabbage
2 qts. green tomatoes
6 large onions
2 oz. white mustard seed
1/2 oz. celery seed
1/2 oz. turmeric
3 red bell peppers, seeded, chopped
2 lbs. granulated sugar
8 Tbs. salt
2 qts. vinegar

Directions:
Directions:
Use a food processor to chop cabbage, green tomatoes and onion. Add all other ingredients to the vegetables and simmer for 30 minutes, stirring occasionally until thick.

Pack into hot, sterilized jars. Seal while hot.

One of Mary Stephens' childhood memories is that Monday was always "wash day." Because "wash day" was an all-day event, a pot of beans was on the stove simmering relatively unattended while the clothes were being washed. Mary tells us this Piccalilli was delicious on a plate of beans. Some of her brothers and sisters kicked the dish up a notch by putting a slice of bread under the beans. Thank goodness Mary doesn't have her mother's squirrel and dumplings recipe.
