1 1/2 lbs. ground beef
1/2 tsp. garlic, minced
1/2 tsp. salt
16 oz. tomato sauce
1 c. sliced black olives
1/2 c. onion, chopped
1 c. sour cream
12 oz. cottage cheese
1 small can green chilies, diced
1/2 lb. Monterey Jack cheese, grated
6 1/2 tortilla chips, crushed

Directions:

Preheat oven to 350ºF.

Brown ground beef in large skillet, stirring until crumbly. Add onion, salt, garlic, tomato sauce and olives, mixing well. Simmer until onions are tender, stirring frequently, about 15 minutes.

Combine sour cream, cottage cheese and chilies in small bowl.

Put ½ the tortilla chips in the bottom of a large greased 13”x9”x2” casserole.
Layer the ground beef, the cottage cheese mixture, the Monterey Jack cheese. Repeat the layers of ground beef, cottage cheese mixture and Monterey Jack cheese. Top with the crushed tortilla chips.

Bake at 350 degrees for 35 minutes.

Serve with picante sauce (salsa).

This recipe freezes well. But if you freeze the casserole, leave the top layer of chips off until it’s time to bake.
