Marinade
1 lb. of flank or sirloin steak cut up into thin strips against the grain
1 tbsp. of ginger paste
1 tbsp. of garlic paste
¼ bunch chopped fresh cilantro
½ tsp of chili powder
¼ tsp of green chutney
1 tsp. of salt
½ lime juice
½ tsp of cumin powder
1 tbsp. of olive oil

Vegetables
1 green bell pepper sliced
1 yellow bell pepper sliced
1 orange bell pepper sliced
1 red bell pepper sliced
5 - 6 mushrooms sliced
1 onion sliced
1 green chili whole
½ lime juice

Fajitas
Sour cream
Guacamole or avocado sliced
Lettuce
Tortillas
Grated cheddar cheese

Directions:
Directions:
1. Combine all the ingredients except the Steak under the marinade and mix well.
2. Marinate the steak with the spices and keep it in the fridge for at least 1 hour. It is better if you marinate overnight.
3 Remove from the fridge and let it warm up at room temperature at least for 1 hour.
4. Heat 1 tbsp. of olive oil and add cook the steak until it has browned and is cooked. Remove on to a plate but keep the juices in the skillet
5. In the same skillet, add 1 tbsp. of olive oil and cook the vegetables. Add some fresh ground pepper and a pinch of salt
6. Cook the vegetables for a minute. Remove the whole green chili.
7. Add the cooked steak slices to the vegetables.
8. Mix well and cook together to blend in the spices. Do not overcook the vegetables.
9 Sprinkle half the lemon juice and mix well
9. Warm up the tortillas on a skillet.
10 Roll up the tortillas with steak and vegetables, guacamole or avocado, lettuce, cheese and sour cream.
