2 lbs. of extra lean beef
2 tbsp. of olive oil
6 cloves of garlic chopped
1 medium onion - chopped
¼ red bell pepper
¼ yellow bell pepper
¼ orange bell pepper
¼ green bell pepper
4 stalks of celery diced
1 tsp. of Louisiana hot sauce
1 can of tomato sauce
2 cans of diced tomatoes - 14.5 oz
1 can of pinto beans 15.5 oz
1 can of black beans or red kidney beans 15.5 oz
1 can of tomato paste 6 oz
1 tbsp. of oregano
1 tsp. of black pepper
½ tsp. of chili powder
1 tsp of Worcestershire sauce
½ tsp of chili pepper flakes (optional)
1 tsp..celery powder
1 tsp.. cumin and coriander powder
1 tsp of paprika powder
1 cup of water

1. In a deep saucepan, heat the olive oil and add chopped garlic and chopped onions.
2 Add ground beef with salt and black pepper and sauté
3.One by one add the seasonings, chili powder, cumin powder, celery powder, oregano powder, coriander powder, cayenne powder, chili pepper flakes and paprika powder and cook for about 2 min.
4. Add the tomato sauce, diced tomatoes, tomato paste , Worcestershire sauce and Louisiana sauce.
5. Let the beef simmer with the tomato sauces and spices for about 30 mins
6. Add the vegetables to the chili and let it cook .
7 Drain the beans to remove excess salt and liguid and add to the mixture. If the mixture is dry add water and let the chili simmer.
8. Do a taste test for salt and spiciness. Depending upon personal taste for spiciness you can add salt, cayenne pepper and chili flakes.
8. If you have crockpot you can simmer the chili for about 2 - 3 hours.
9 Cooking on the stove, you can simmer for another 30 mins.
10 Sprinkle fresh chopped cilantro just before serving.

Serve with grated cheddar cheese and sour cream.

This is a milder version of the chili, If you like the spicy version add more chili or cayenne pepper or serrano peppers.
